Responsibilities
Tasks
- Production start-up, including bakery equipment pre-operational check
- Ensure the accuracy of standard recipes and technically correct process during production runs
- Monitor the production process from mixing, resting of dough, through rounding and other parameters that form consistent bread quality, standard look, and flavour
- Organise workflow in the bakery to maximize efficiency
- Provide expertise support by evaluating quality, yields, processes, procedures and suggest improvements.
- Work closely with Head Baker on product development
- Coach junior staff (Assistant Bakers, Production Bakers, etc.) providing hands-on training
- Facilitate discussions to identify options for continuous improvement, especially with junior staff.
- Back up Head Baker; re-place Head Baker during his/her absence.
