Responsibilities
Tasks
· Prepare specialty foods such as Sushi rolls, other raw food and other menu items
· Expertly cutting, slicing, and filleting different types of fish.
· Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
· Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
· Maintain records of food costs, consumption, sales and inventory
· Demonstrate new cooking techniques and new equipment to the cooking staff
· Create new recipes, instruct cooks in preparation, cooking, garnishing and presentation of food
· Supervise cooks and other kitchen staff
· Prepare and cook food on a regular basis, or for special guests or functions,
· Requisition of food and kitchen supplies
· Arrange for equipment purchases and repair
