Tasks
Prepare specialty foods such as Sushi rolls, other raw food and other menu items
Expertly cutting, slicing, and filleting different types of fish.
Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informingthe Executive Chef when quality is sub-standard
Preparing various types of sushi dishes according to established guidelines on quality, portionsize, presentation, and food safety
Maintain records of food costs, consumption, sales and inventory
Demonstrate new cooking techniques and new equipment to the cooking staff
Create new recipes, instruct cooks in preparation, cooking, garnishing and presentation of food
